Yusheng or Lo Hei is a dish familiar to Singaporeans and Malaysians during the Lunar New Year. Now it is making its way to China.
Fish symbolises abundance, while sprinkling limewater represents an auspicious year ahead. Each ingredient in Yusheng has a corresponding auspicious greeting to it.
The pouring of oil, which also means money in Cantonese, symbolises more money. And after that, you toss all the ingredients together. Some believe that the higher you toss, the more you will earn in the coming year.
This culinary invention is a festive feature of Lunar New Year celebrations in Singapore and Malaysia. And for the first time, it can be found at a restaurant in Shanghai.
