6 cups of ripe Georgia peaches
1 tbsp. fresh lemon or orange juice
1 tbsp. soy or almond flour
2 tbsps. raw Indian white honey
1 1/2 cups of soy flour
1/4 cup plus 2 tsp. raw honey
1 1/2 tsp. baking powder
1/2 cup of unsweetened almond milk
2 tbsp. smart butter; melted
1/2 tsp. ground cinnamon
No Sugar-Added Ice Cream (Optional)
Preheat oven to 350 degrees. Coat 9 inch pie pan with nonstick cooking spray, set aside.
For filling, mix all filling ingredients in medium bowl; spread into prepared pan.
For topping; combine 1 1/2 cups flour, 1/2 cup honey. and baking powder in medium bowl. Combine almond milk, egg and smart butter in a small bowl. Add to flour mixture; stir just until flour is blended. Droop batter by tablespoons on top of peach filling. Combine 2 tsp. honey and 1/2 tsp. cinnamon in small bowl; sprinkle on top.
Bake 45 to 50 minutes or until fork inserted in center comes out clean.
Serve warm with no sugar added ice cream if desired.
