Nacho Cheese Popcorn
1/4 cup cheddar cheese powder or 1 packet of cheese powder from any packaged macaroni and cheese box
1 tsp. of onion powder
1/4 tsp. of chipotle powder
1/4 cup plus 2 tbsp. of olive oil
2/3 cup of popping corn
4 tbsp. unsalted Smart Spread or low fat margarine
Kosher salt to taste
1. In a small bowl, combing the cheddar powder, onion powder and chipotle powder.
2. In a large pot, heat the oil. Add the popping corn, cover (leaving the lid slightly ajar to allow steam to vent) and pop over medium heat, shaking the pan until the popping slows to 2-second intervals. Immediately transfer the popped corn to a large bowl and drizzle with the Smartbutter Spread or margarine.
3. Add half the seasoning mixture and toss. Add the remaining mixture and toss again. Season with salt if desired.

You can get creative using this formula. You can cook White Cheddar Popcorn, Plain Cheddar Popcorn and create your own interesting flavors like Wasabi Soy Popcorn. Just make sure that the mixture is in powder form. For the presentation, you can also use your imagination. I use either wrapping paper or decorative scrap booking paper with either aluminum foil or wax paper lined inside. You can fold over and form a cone Be sure to use scotch tape to enclose the cone. Then pour the flavored popcorn into the cones! 🙂
