Healthy Eggplant Parmesan

Ingredients:
1 can olive oil spray
1 medium/large size eggplant (preferably organic)
1 bag of shredded part-skim mozzarella cheese
2 cans of organic cubed tomatoes with onion and garlic

Steps:
Layer a pan with tin foil and spray olive oil lightly on the foil.
Slice the eggplant lengthwise
layer 1/2 of the sliced eggplant on the foil
add 1 can of tomatoes
add about 1/2 cup of the shredded cheese
layer the other half of the sliced eggplant on top
layer the 2nd can of tomatoes over the eggplant
add the other 1/2 cup of shredded cheese

Bake at 375 degrees for 45 minutes. Serves 3.
