Marisa Sung’s Mediterranean Tilapia with Brown Rice
This dish is a simple skillet meal
Steps:
Season 4 Tilapia fillets with 1/4 tsp. Greek seasoning
Heat 1 tbsp. olive oil
Add fish; cooks for 5 mins.
Remove from skillet
Add 2/3 cup of chopped red onions, 1/3 cup of low fat Italian dressing, 1/4 cup of sliced kalamata olives and 2 tsp. minced garlic to the skillet
Cook for 3 mins.
Garnish with sliced tomatoes
Serve over brown rice
