Marisa Sung’s Simple Skillet Supper
Tofu-Coconut Curry
Steps:
In skillet, heat 1 tbsp. oil
Add 1 lb firm tofu, cubed
1/4 lb snow peas
1 cup each sliced red bell peppers and chopped onions and 1 tsp. each chopped ginger and garlic
Cook for 5 mins.
Add 1 can light coconut milk, 2 tbsps. raw Indian honey, 2 tbsps. lime juice and 1 tbsp. red curry paste
Cook for 3 mins.
Serve over Keiko Aioki’s Soba Noodles
