Marisa Sung’s Simple Skillet Supper

Pepper Chicken

Quick Steps:
In skillet, heat 2 tbsp. olive oil
Add 3 cups of sliced red, yellow and green peppers
Add 1 red onion, peeled and sliced
cook this mixture for 3 mins.
Remove from skillet
In the same skillet add 1 lb of boneless, skinless chicken breast; sliced
Add 2 tsp. of chopped garlic and cook for 4 mins. or until browned
In bowl, whisk together 1/4 cup of chicken broth, 2 tbs. soy sauce and 2 tsp. cornstarch
Add to skillet and bring to a boil
Cook for 1 min. more
Add the veggies
Serve over rice noodles or Keiko Aoki’s Soba Noodles
