All it requires is some whole grain bread to accompany it.<\/strong><\/p>\n<p>Prep Time: 10 minutes<br \/>\nCook Time: 50 minutes<br \/>\nTotal Time: 1 hour<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n\u20221 tbsp canola oil<br \/>\n\u20222 garlic cloves, minced<br \/>\n\u20221 onion, finely chopped<br \/>\n\u20221 large carrot, diced<br \/>\n\u20221 stick of celery, chopped<br \/>\n\u20221 small russet potato, peeled and cut into pieces<br \/>\n\u20224 cups fat-free, low-sodium chicken or vegetable broth<br \/>\n\u20222 cups of water<br \/>\n\u20221 1\/2 cups dried split green peas, picked through and rinsed<br \/>\n\u2022Freshly ground black pepper<\/p>\n<p><strong>Preparation:<\/strong><br \/>\nHeat oil in a large pot. Saut\u00e9 garlic, onions, carrots and celery for 3-4 minutes, until softened. Add potatoes, broth, water and dried split peas. Bring to a boil, then reduce heat to low, cover and simmer for 45 minutes. Allow soup to cool a little. Transfer to a blender and blend until smooth.
