{"id":17603,"date":"2014-09-06T23:09:23","date_gmt":"2014-09-06T23:09:23","guid":{"rendered":""},"modified":"2014-09-06T23:09:40","modified_gmt":"2014-09-06T23:09:40","slug":"Marisa-Sung-s-French-Roast-Chicken-With-Grapes","status":"publish","type":"post","link":"https:\/\/asiancemagazine.com\/?p=17603","title":{"rendered":"Marisa Sung&#8217;s French Roast Chicken With Grapes"},"content":{"rendered":"<p><strong>This dish is perfect for September!<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 cup boiling water<br \/>\n1 cup bulgur<br \/>\n1\/2 cup chopped parsley<br \/>\n1\/4 cup chives<br \/>\n1 tbsp. finely shredded lemon peel<br \/>\n2 tbsp. lemon juice<br \/>\n1 tsp. dried tarragon, crushed<br \/>\n2 cups seedless white grapes, halved<br \/>\n3 tbsp. of smart butter spread<br \/>\n1 egg, lightly beaten<br \/>\nFreshly ground black pepper<br \/>\n3 lb. whole chicken<br \/>\n2 tsp. paprika<\/p>\n<p><strong>Ingredients for Sauce:<\/strong><br \/>\n1\/4 cup of soy flour<br \/>\n1 cup chicken broth<br \/>\n1\/2 cup dry white wine<br \/>\n3 cups seedless grapes, halved<br \/>\nFreshly ground black pepper<br \/>\n1\/2 cup of light whipping cream<\/p>\n<p><strong>Steps:<\/strong><br \/>\n1. Preheat oven to 350 degrees.<br \/>\n2. In a bowl pour boiling water over bulgur. Let stand 15 mins. and drain off the exess water<br \/>\n3. Stir in parsley, , chives, lemon peel, lemon juice, and tarragon.<br \/>\n4. Add 2 cups of grapes, 2 tbsp. smart butter and egg and season with pepper.<br \/>\n5. Rinse chicken and pat dry with paper towels.<br \/>\n6. Spoon bulgur mixture into cavity of chicken.<br \/>\n7. Tie wings and legs together with string to secure bulgur mixture.<br \/>\n8. Place chicken on rack in a shallow roasting pan.<br \/>\n9. Spread with remaining smart butter or margarine and sprinkle with paprika.<br \/>\n10. Bake uncovered for 1 1\/2 hours and remove from pan.<br \/>\n11. Cover with foil and let stand for 10 mins.<br \/>\n12. For sauce, drain fat from pan, reserving 1\/4 cup.<br \/>\n13. Place reserved drippings in saucepan and stir in the flour.<br \/>\n14. Cook and stir till flour browns.<br \/>\n15. Stir in the chicken broth and wine and cook and stir till thickened and bubbly.<br \/>\n16. Cook and stir 1 minute more.<br \/>\n17. Add 3 cups grapes and season with pepper.<br \/>\n18. Simmer, uncovered, for 5 mins.<br \/>\n19. Add cream just before serving and heat through.<br \/>\n20. To serve, remove bulgur from chicken and cut chicken into pieces and arrange on a serving platter with bulgur.
