{"id":18036,"date":"2014-11-17T19:11:13","date_gmt":"2014-11-17T19:11:13","guid":{"rendered":""},"modified":"2025-10-15T01:11:00","modified_gmt":"2025-10-15T01:11:00","slug":"marisa-sung-s-avocado-prawn-salad","status":"publish","type":"post","link":"https:\/\/asiancemagazine.com\/?p=18036","title":{"rendered":"Marisa Sung&#8217;s Avocado Prawn Salad"},"content":{"rendered":"<p><strong><em>This is a delicious healthy salad that you can prepare for either lunch or for a light dinner! \ud83d\ude42<\/em><\/strong><\/p>\n<p><strong>Shrimp Marinade<\/strong><br \/>\n<strong>Ingredients:<\/strong><br \/>\n3 oz. garlic, chopped<br \/>\n2 tsp. parsley, chopped<br \/>\n2 tsp. chives, chopped<br \/>\n1\/2 tsp. rosemary, chopped<br \/>\n1\/2 tsp espolette, chopped<br \/>\n1\/2 tsp. lemon zest, chopped<br \/>\n2 tsp. agave nectar<\/p>\n<p><strong>Steps:<\/strong><br \/>\nIn a large mixing bowl, add all ingredients and stir to combine.  Add 8 large prawns and toss with your hands to ensure shrimp are evenly coated.  Place in refrigerator and marinate for 30 mins.<\/p>\n<p><strong>Sherry Vinaigrette<\/strong><br \/>\n<strong>Ingredients:<\/strong><br \/>\n1\/2 cup sherry vinegar<br \/>\n1 1\/2 tbsp. parsley chopped<br \/>\n1\/2 tbsp. chives chopped<br \/>\n1\/2 tbs shallots, finely diced<br \/>\n1\/2 tsp Dijon Mustard<br \/>\n1 tsp maple bourbon<br \/>\n3 tbs. extra virgin olive oil<br \/>\n3\/4 cup plus 1 tbsp. canola oil<br \/>\nSalt and pepper to taste<\/p>\n<p><strong>Steps:<\/strong><br \/>\nCombine all ingredients in a small mixing bowl and stir to combine.  Refrigerate until ready to serve.<\/p>\n<p><strong>Salad<\/strong><br \/>\n<strong>Ingredients:<\/strong><br \/>\n8 marinated prawns<br \/>\n2 avocados, cut in half<br \/>\n1\/2 bunch living watercress, trimmed<br \/>\n1 endive, julienned<br \/>\n1\/4 fennel, julienned<br \/>\n8 cherry tomatoes, cut in half<br \/>\n1\/2 cup sherry vinaigrette<br \/>\nsalt to taste<\/p>\n<p><strong>Steps:<\/strong><br \/>\nGrill prawns and avocado.  Toss the vegetables in sherry vinaigrette and then assemble with avocado, watercress and vegetables.  Top with grilled prawns and sprinkle with Salt.
