{"id":8278,"date":"2011-04-09T18:04:26","date_gmt":"2011-04-09T18:04:26","guid":{"rendered":""},"modified":"2011-04-09T18:04:26","modified_gmt":"2011-04-09T18:04:26","slug":"Garlic-Lemon-Chicken-Gyro-With-Asparagus-","status":"publish","type":"post","link":"https:\/\/asiancemagazine.com\/?p=8278","title":{"rendered":"Garlic Lemon Chicken Gyro With Asparagus"},"content":{"rendered":"<p><strong>Ingredients<\/strong><br \/>\n1 lb fresh asparagus spears<br \/>\n1 lemon<br \/>\n1\/3 cup pitted kalamata olives<br \/>\n3 boneless, skinless chicken breasts (1 3\/4 lb)<br \/>\n1\/2 cup fresh garlic cloves<br \/>\n5\u20136 whole fresh thyme sprigs<br \/>\n1\/2 cup extra-virgin olive oil<br \/>\n1 teaspoon Greek seasoning, divided<br \/>\n8 oz plain hummus<br \/>\n4 whole wheat (or regular) pita bread<\/p>\n<p><strong>Prep<\/strong><br \/>\n\u2022Preheat oven to 400\u00b0F.<br \/>\n\u2022Cut asparagus into 2-inch pieces, removing tough root end.<br \/>\n\u2022Cut lemon into very thin slices.<br \/>\n\u2022Slice olives.<\/p>\n<p><strong>Steps<\/strong><br \/>\n1.Place chicken in 2-quart baking dish; add garlic and thyme sprigs around chicken. Pour oil over chicken; sprinkle with 1\/2 teaspoon Greek seasoning. Arrange lemon slices on top of chicken and cover. Bake 30\u201340 minutes or until 165\u00b0F. Let stand 5 minutes before slicing.<br \/>\n2.Preheat large saut\u00e9 pan on medium-high 2\u20133 minutes. Transfer 2 tablespoons garlic-seasoned oil (from chicken) to pan then add asparagus and 1\/2 teaspoon Greek seasoning; cook and stir 4\u20135 minutes or until tender.<br \/>\n3.Spread hummus over pita bread. Slice chicken and arrange over hummus. Sprinkle olives and roasted garlic cloves over chicken. Fold in half. Serve with asparagus.<br \/>\nNOTE: The cooked lemon slices are very tender.
