Healthy for your heart–Zucchini ribbon salad

Ingredients
1/2 cup pre-diced fresh tomatoes
1/3 cup pre-sliced green onions
1/4 cup balsamic vinaigrette
1 tablespoon basil herb paste
1/4 cup crumbled reduced-fat Gorgonzola cheese
2 medium zucchini

STEPS
1. Combine all ingredients (except zucchini) in salad bowl.

2. Cut zucchini in 3-4inch long sections. Cut thin lengthwise strips of zucchini, using vegetable peeler, into bowl. Discard inner portion.

3. Toss to coat; chill until ready to serve.

    I try to keep inventing new salads because it gets B O R I N G if you have to eat them every day. Along with the new salads come new dressings. Don’t you just get so sick of the same 6 varieties of dressings at the salad bar? They need to get creative! I invent my own because they don’t offer enough variety for me. They can come up with 35+ varieties of coffee beverages, but offer the same 6-8 old salad dressings (yawn).

    They need to tone it down with the coffee because I feel like I am explaining a very complicated surgical procedure to someone when I attempt to order a simple coffee and I am not awake yet. Do you know what I mean??
