Marisa Sung’s Delicious Diabetic Dessert

Apple Crisp

5 cups thinly sliced Granny Smith Apples
1 cup apple cider
1/2 cup fat-free sugar free butterscotch ice cream topping
1/4 cup of wheat flour
1 tsp ground cinnamon
3 cups low fat low sugar granola
3 tablespoons smart butter melted
Vanilla low-fat, no sugar added ice cream

Steps:
Preheat oven to 350 degrees. Lightly coat 8 inch square baking pan with non-stick cooking spray; set aside.
Combine apples, cider, 1/4cup butterscotch topping, flour and cinnamon in a large bowl. Place in prepared pan.
Combine remaining 1/4 cup butterscotch topping, granola and margarine. Dollop over apples.
Bake, covered 40-45 mins. Remove cover and bake and additional 15-20 mins. or until mixture is bubbly and apples are tender,

Serve warm with a dallop of ice cream.

Calories 200, Total fat 4g, Protein 4g, Carbohydrate, 40g, sodium 125mg, Dietary Fiber 5g

    Check out my Diabetic Beverage Dessert-Iced Cappuccino-listed on my blog. I am trying to keep both the Calorie and the Carbohydrate levels as low as possible. Depending on your level of Diabetes, results in the number of actual clicks of the insulin pen. As Diabetes is the number one disease for Asians and Indians in particular, I am trying to alter my recipes to suit the diabetic diet. I follow these recipes and I am not a Diabetic but it is just much healthier! My mother was very sick for a few years and is a Diabetic and so I had to alter all of our family recipes. When you change the poison aka food you improve your life.

    I was going to suggest about 5 clicks on the insulin pen this time of year, but then realized 40 bars in a 13×9 pan are about 1″x3″ each…..so maybe 2-3 clicks. Sounds yummy with all my favourite ingredients. I only have dessert about 6times/year, so you’ve already provided about 2 years worth of delights. Thanks!

    My pleasure! I am very passionate about cooking and baking. I love to create new and innovative recipes. You can always pull a Sandra Lee “Semi-Homade” (That show is a joke=she is not talented at all!) and add substitutions like carob chips or no chocolate chips at all to lower the numbers. Use substitutions and subtract certain items for blood sugar levels.

    There will never be another Shirley Temple, I still have the Shirley doll that my Grandma gave me so long ago! Lucky for me, my brother didn’t blow up, decapitate or bury that one like he did all of the rest! 🙁
