Marisa Sung’s Turkey Swedish Meatballs

Ingredients:
1 lb ground turkey
1 cup of freshly ground multi-grain bread crumbs
1/4 cup of finely chopped sweet onion
1/2 cup of low fat milk
1 egg
1 tsp. of Kosher Salt
1/8 tsp. of nutmeg
1/8 tsp. of black pepper
1/4 cup of margarine or smart butter spread
1/2 tsp. of caraway seed or dill weed

Steps:
Combine first 8 ingredients
Mix well and shape into balls using 1 tbsp. for each ball
Melt smart butter in blazer pan of chafing dish or fry pan on top of butane unit over direct high flame
Brown meat balls well, turning as need to brown evenly
Cover; turn flame to low
Cook just until done; 15-20 mins.
Tip pan slightly and spoon off any excess fat
Combine hot cream sauce and caraway seed or dill weed
Pour over the meat balls; stirring gently
Place over water jacket for serving
Serve over hot rice noodles or soba noodles
Yield = 4 servings, 16 meatballs

Cream Sauce
Ingredients:

1/4 cup of smart butter spread
3 to 4 tbsp. of soy flour
1/2 tsp. kosher salt
Dash of Black Pepper
2 cups of low fat milk

Steps for Cream Sauce:
Melt butter or margarine in blazer pan of chafing dish
Stir in flour and seasonings
Stir in milk slowly and cook; stirring constantly until thick and smooth
Yield = 2 1/4 Cups
