Marisa Sung’s Chinese Style Steamed Red Snapper
Ingredients:
2 lb. drawn red snapper=whole fish minus the internal organs
2 dried Chinese Black Mushrooms; soaked
1 small carrot on the stem
1 large green onion
1/4 cup of red bell pepper or fresh red chili
1 1/4 inch piece of gingerroot
2 tbsp. light soy sauce
1 tbsp. cooking oil
Steps:
1. Scale fish if necessary. Rinse and pat dry. Make several deep cuts diagonally across body of fish on both sides.
2. Drain mushrooms, squeezing out water. Remove stems, cut caps into matchstick pieces. Cut carrot, green onion, bell pepper and gingerroot into matchstick pieces.
3. Place the fish on a plate; scatter vegetables and gingerroot over. Combine Soy Sauce and oil. Pour over fish.
4. Set plate on rack in steamer. Cover, steam over simmering water about 12 minutes or until fish flakes easily with a fork.
