Marisa Sung’s Chinese Chicken and Green Beans

Ingredients:
3 tbsp. olive oil
1 1/2 lbs. of boneless chicken breast cut into strips
1 medium Spanish onion thinly sliced
1 can of low fat low sodium chicken broth
1 ounces of fresh green beans
1/2 cup of thinly sliced celery
1 can water chestnuts; drained and sliced
1 can sliced mushrooms; drained
3 tbsp. sherry
3 tbsp. soy sauce
1 tbsp. cornstarch
1/2 tsp. Himalayan salt

Steps:
Heat oil in Chinese Wok over direct flame
Sautee chicken until well done over high flame for about 15 minutes; stirring often
Add onion slices; stir and cook until limp = 3-5 mins.
Add broth slowly; bring to a boil
Stir in beans, celery, water chestnuts and mushrooms
Cover; cook until celery is tender yet retains a crispiness; about 4 mins.
Combine remaining ingredients; mix until smooth and stir into hot mixture
Heat until mixture thickens, stirring constantly
Serve with either hot fluffy white or brown whole grain rice
Yield = 4 servings
