Marisa Sung’s Vitamin Packed Vegetarian Entree

The omelet can be served as a lunch entrée accompanied by a small salad and a glass of good wine or cappucino as they do in France or as a breakfast entrée! Bon Apetit! 🙂

The Cheese and Tomato Omelet

Ingredients:
8 eggs
1/4 cup of skim milk
1 1/2 tsp. of Himalayan salt
Dash of pepper
2 tbsp. of smartbutter spread or margarine
1 tomato diced
3/4 cup of low fat or fat free shredded cheddar cheese
diced parsley of a few leaves

Steps:
Combine eggs, milk, tomatoes, cheese, salt and pepper; beat slightly
Melt smartbutter or margarine in blazer pan of chafing dish over direct high flame
Add egg to mixture
Cook slowly until set, but still shiny
To speed cooking; run a spatula around the edge of the pan during cooking and lift omelet to let egg mixture flow below omelet
Fold omelet in half
Turn out of pan onto warm plate
Sprinkle with diced parsley
Serve at once.

Yield = 4 servings
