Marisa Sung’s Vitamin Packed Vegetarian Entree

Mushroom Quiche

Ingredients:
3 tbsp. smartbutter spread or margarine
2 tbsp. minced shallots or green onions
1 lb. of fresh sliced mushrooms
1 tsp kosher salt
1 tsp. lemon juice
2 tbsp. Madeira (wine)
3 eggs
1 1/2 cups of light cream
1 9 inch whole grain pie shell baked for 5 mins. at 425 degrees
1/4 cup of grated low fat Swiss cheese

Steps:
Melt smartbutter spread in a small frying pan
Saute shallots for a few minutes
Add mushrooms, salt, lemon juice and Madeira
Cook for several mins. until mushrooms are done and their juice has evaporated
Beat eggs and cream until smooth
Add mushrooms; mix
Pour into pastry shell
Sprinkle cheese on top of quiche
Bake in preheated 375 degree oven 25 to 30 mins., until knife inserted in center comes out clean
Serve Quiche hot

Servings = 6 to 8
