Marisa Sung’s Delicious and Healthy Holiday Dips

During the Holiday Season, guests often drop by unexpectedly. Therefore, it is advisable to keep appetizers in the refrigerator and pantry. An excellent choice would be multi-grain tortilla chips, low-fat pita chips, fresh cut vegetables and frozen cut vegetables. I have two amazing dips to serve over the Holiday Season = Homemade Roasted Red Pepper Hummus and Easy Tzatziki! 🙂

Homemade Roasted Red Pepper Hummus
Ingredients:
16 ounces chickpeas
6 ounces roasted red bell peppers
1 jalapeno, seeded, diced
1 tablespoon chopped garlic
3 tablespoons chopped cilantro leaves
1 teaspoon paprika
3 tablespoons chopped onion
1 teaspoon freshly cracked black pepper
1 tablespoon chipotle pepper in adobo
1/4 cup extra-virgin olive oil

Steps:
Mix all ingredients, except olive oil and pita bread, in food processor until pureed, then slowly add in olive oil.
Let set up for 1 hour prior to serving.
Serve with toasted pita bread or tortilla chips.
Yield: 8 to 12 servings

Easy Tzatziki
Ingredients:
1 pound (1 pint) plain yogurt (whole milk or low fat)
1 hothouse cucumber, unpeeled and seeded
1 tablespoon plus 1/2 teaspoon kosher salt
1/2 cup sour cream
1 tablespoon Champagne vinegar or white wine vinegar
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 tablespoon good olive oil
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced fresh dill
Pinch freshly ground black pepper

Steps:
Place the yogurt in a cheesecloth or paper towel-lined sieve and set it over a bowl. Grate the cucumber and toss it with 1 tablespoon of kosher salt; place it in another sieve, and set it over another bowl. Place both bowls in the refrigerator for 3 to 4 hours so the yogurt and cucumber can drain.
Transfer the thickened yogurt to a large bowl. Squeeze as much liquid from the cucumber as you can and add the cucumber to the yogurt. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1/2 teaspoon salt, and pepper. You can serve it immediately, but I prefer to allow the tzatziki to sit in the refrigerator for a few hours for the flavors to blend. Serve chilled or at room temperature.

Yield = 2 1/2 cups

    How strange?? Joni Mitchell is the same age as my late birth mother and she gave up her child for adoption at the same time. Sounds like the same story too. My late birth mother was exceptionally creative just like her. Grew up going to Woodstock and all. Very weird. No wonder I’m obsessed with The Doors, and The Who! I visited Jim Morrison’s grave in Paris around 10 times and left really nice flowers like we were old friends! My boyfriend at the time thought I was a bonafide lunatic because I kept insisting on visiting his grave and adorning his shrine with presents and flowers! Also, I posted The End by the Doors on my Robin Williams Posting and he killed himself that night. That really freaked me out for a while. 🙁

    Is there no end to Marisa’s talents? Woow…what a combo of treats. I still have Joni Mitchell’s 8 track but not the ’68 VW Bug I use to listen to her in. Better quit before she annoints me the “Holiday Dip”. Peace
