Mandarin Chicken Salad

Ingredients
1 (10-ounce) package roasted seasoned chicken
1/4 cup pre-diced celery
3/4 cup low-fat mayonnaise
2 tablespoons pre-diced onions
1/8 teaspoon salt-free herb/spice blend
1/8 teaspoon pepper
1 (11-ounce) can mandarin oranges lite syrup (drained, about 1 cup)
1 medium tomato (rinsed)
4 lettuce leaves (rinsed)

Steps
1. Place chicken and celery in medium bowl, breaking chicken into bite-size pieces, if needed. Stir in mayonnaise, onions, spice blend, and pepper until well blended.
2. Fold (gently mix) oranges into chicken salad.
3. Slice tomato into thin slices. Place lettuce leaves and tomato slices on plate. Top with chicken salad. Serve.
