Marisa Sung’s Delicious Diabetic Dessert
Baked Orange Custard with Strawberries
Ingredients:
3/4 cup of cholesterol free egg substitute
1/4 cup of Agave or Raw White Indian Honey
1 can of non-fat evaporated milk
1/4 cup of light cream
2 tbsp. fresh squeezed orange juice
1 tbsp. grated orange peel
1 tsp. vanilla
2 1/2 cups of fresh strawberries; sliced
2 tablespoons of sugar substitute or Agave/Honey
Steps:
Preheat oven to 350 degrees
Combine egg substitute, honey, evaporated milk, cream orange juice, orange peel and vanilla in a medium bowl until well blended
Pour mixture into 6 ounce custard cups/ramekins
Place ramekins in 13 X 9 inch baking pan
Fill with hot water halfway up to the side of the ramekins
Bake 30-35 minutes
Remove from oven; leaving ramekins in hot water till they reach room temperature
While custards cool, toss with sliced strawberries; add sugar substitute/honey/agave set aside
Serve at room temperature or cold topped with the strawberries
