Marisa Sung’s Delicious Diabetic Dessert
Hikers’ Bar Cookies
Ingredients:
3/3 cup of quinoa or soy flour
1/2 cup of sugar free maple syrup
1 cup of uncooked quick oats
1/4 cup of toasted wheat germ
1/4 cup of unsweetened apple sauce
1 cup of smart butter; softened
1/8 tsp. Himalayan salt
1/2 cup of Cholesterol-free egg substitute
1/4 cup of dried cranberries
1/4 cup of sunflower kernels
1 tbsp. orange peel
1 tsp. ground cinnamon
Steps:
Preheat the oven to 350 degrees
Lightly coat 13 X 9inch baking pan with non-stick cooking spray
Beat eggs, flour, oats, Wheat germ, applesauce, smart spread and salt in large bowl with electric mixer at medium speed till blended
Add egg substitute, cranberries, sunflower kernels, orange peel, and cinnamon; spread into pan
Bake 15 mins. or until firm to touch
Cool completely in pan
Cut into 24 squares
