Key Lime Cheesecake with Strawberries and Fresh Mint

Ingredients:
12 whole low-fat graham crackers, crushed
2 tbsp. smart butter spread
2 pkg. reduced fat cream cheese
1 container of nonfat plain greek yogurt
2/3 cup raw Indian White Honey
1/4 cup of lime juice
1/3 cup of raw honey
2 tsp. lime peel
1 1/2 tsp. vanilla
3 cups fresh strawberried , quartered
2 tbsp. finely chopped mint leaves

Steps:
Preheat oven to 350 degrees and coat a 9-inch baking pan with nonstick cooking spray; set aside
Place graham cracker pieces and smart butter in food processor/blender; pulse until course in texture
Gently press crumb mixture on bottom and up 1/2 inch side of pan
Bake 8-10 mins. or until lightly browned and cool completely on wire rack
Beat cream cheese, yogurt, honey, lime juice, lime peel and vanilla in large bowl with electric mixer at high speed until smooth
Pour into cooled pie crust
Cover with plastic wrap and freeze 2 hours or refrigerate overnight
Combine strawberries, remaining honey and mint in medium bowl 30 mins. before serving; set aside
Just before serving, spoon strawberry mixture over cheesecake
