Marisa Sung’s Delicious Diabetic Dessert
Iced Cappuccino
Ingredients:
1 cup fat-free/no sugar added vanilla frozen yogurt or ice cream
1 cup cold strong brewed coffee (like Starbucks Dark Roast)
1 tsp. unsweetened cocoa powder
1 tsp. vanilla
1 packet of sugar substitute or 1 tsp. of raw honey or Agave
Steps:
Place all ingredients in a food processor/blender, process till smooth
Place container in freezer
Freeze 1 1/2 to 2 hours or until top and sides of mixture are partially frozen
Scrape sides of container, process till smooth and frothy.
Garnish as desired and serve immediately
For Iced Mocha Cappuccino: Increase the amount of unsweetened cocoa powder to 1 tbsp. Proceed as above.
Do yourself a favor and invest in a personal blender to bring to the office. The starbucks line is not diabetic friendly and it is loaded with fat and calories!! 🙁
