Marisa Sung’s Cowboy Caviar

Corn & Black Bean Salsa

Ingredients:
2 cups fresh corn kernels
1/4 cup of olive oil
1/2 cup diced red onion
1 cup diced red bell pepper
1/2 cup chopped cilantro
6 tbsp. fresh lime juice
2 (15 oz. cans black beans, rinsed and drained)
Himalayan salt
Freshly cracked black pepper
Gluten free low fat organic tortilla chips

Steps:
Preheat the broiler
Toss in 2 tbsp. of olive oil
Place on an aluminum foil lined baking sheet
Broil 8 inches away from heat for about 5 mins. or until golden brown and tender
Set aside
Toss together the red onions, red bell peppers, cilantro, lime juice, 2 cups black beans, corn and remaining olive oil in a large bowl
Season to taste with salt and pepper
Serve with warm tortilla chips

Yield: 6 cups
