Marisa Sung’s Delicious Diabetic Dessert

Cranberry Biscotti

Ingredients:
3 cups of soy flour
1 1/2 tsp. baking soda
1/2 tsp. salt
3 eggs
2/3 cup of raw Indian Honey
1 tsp. vanilla
1/2 low sugar low fat dried cranberries
1/3 cup of almonds, chopped
1 tbsp. reduced fat 2% milk

Steps:
Preheat oven to 350 degrees and lightly coat a cookie sheet with nonstick cooking spray; set aside
Combine flour, baking soda and salt in medium bowl; set aside
Beat eggs, honey and vanilla in large bowl with electric mixer at medium speed until combined
Add flour mixture; beat well
Stir in cranberries and almonds
Turn dough out onto lightly floured work surface
Knead 4 to 6 times
Roll dough into 20 inch log
Place on prepared cookie sheet
Brush dough with mild
Bake for 30 mins. or until firm to touch
Remove from oven; cool 10 mins.
Diagonally slice into 30 biscotti
Place slices on cookie sheet
Bake for 10 mins. and turn and bake and additional 10 mins.
Cool on wire racks
Store in airtight container
