Marisa Sung’s Grilled Vegetables
Ingredients:
4 yellow squash and/or zucchini
2 large red bell peppers
1/4 cup olive oil
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. Himalayan salt
Steps:
Preheat grill or grill pan
Cut each squash lengthwise into three long planks
Cut peppers into quarters and remove the stem and core
Place both vegetables in a large bowl
Combine the remaining ingredients, coat veggies with mixture
Place peppers on the grill, cook 5-6 mins. on each side or until tender
Cut into bite size pieces and serve
