Marisa Sung’s Avocado Prawn Salad
This is a delicious healthy salad that you can prepare for either lunch or for a light dinner! 🙂
Shrimp Marinade
Ingredients:
3 oz. garlic, chopped
2 tsp. parsley, chopped
2 tsp. chives, chopped
1/2 tsp. rosemary, chopped
1/2 tsp espolette, chopped
1/2 tsp. lemon zest, chopped
2 tsp. agave nectar
Steps:
In a large mixing bowl, add all ingredients and stir to combine. Add 8 large prawns and toss with your hands to ensure shrimp are evenly coated. Place in refrigerator and marinate for 30 mins.
Sherry Vinaigrette
Ingredients:
1/2 cup sherry vinegar
1 1/2 tbsp. parsley chopped
1/2 tbsp. chives chopped
1/2 tbs shallots, finely diced
1/2 tsp Dijon Mustard
1 tsp maple bourbon
3 tbs. extra virgin olive oil
3/4 cup plus 1 tbsp. canola oil
Salt and pepper to taste
Steps:
Combine all ingredients in a small mixing bowl and stir to combine. Refrigerate until ready to serve.
Salad
Ingredients:
8 marinated prawns
2 avocados, cut in half
1/2 bunch living watercress, trimmed
1 endive, julienned
1/4 fennel, julienned
8 cherry tomatoes, cut in half
1/2 cup sherry vinaigrette
salt to taste
Steps:
Grill prawns and avocado. Toss the vegetables in sherry vinaigrette and then assemble with avocado, watercress and vegetables. Top with grilled prawns and sprinkle with Salt. Top with grapefruit pieces for garnish.
